When I was probably 15ish, and visiting my dad (yes, we used to be close), he showed me an amazing recipe for a NSA (no sugar added) muffins that we dubbed "evil whatever's". Not sure if the name stuck in his house, but here that's what they are called.
Today, I remade them but gluten free/vegan style instead!
Here is the recipe:
1 cup soaked gf oats (turns into 2 cups oats when you soak it with 1 cup h2o)
1 cup chopped walnuts
1 cup chopped dates
1 cup chopped figs
1 cup raw pumpkin seeds
1 cup vegan chocolate chips
1 cup nsa raw coconut flakes
1 flegg (flax egg)
Process all ingredients in a food processor until uniformly combined. Put into muffin pan (pregrease) and bake at 375 for ~25 mins, or until tops are slightly browned. This is a vegan recipe, so no worries about making sure the egg is cooked because there is no egg.
Today, I used a cookie sheet and I cut them into bars, but the mufffin tray is really the best way to go. Each bar/muffin is ~120 calories.

I can attest to the utter deliciousness of these evil whatever bars... i was lucky enough to taste them. I am a stalwart gluteneater and I loved them! Keep cookin Sweetie and I will keep eatin!
